*sniff… sniff* It’s cold outside and I’ve been sick with the flu this week 😦
I get miserable when I am ill and I therefore have to keep myself occupied.
Its winter… don’t we all just want to cuddle up in a blankey and eat comfort food hmm…
Soo… I baked a delicious cake to enjoy as my comfy snack.
Purelytwins have blogged about a “chocolate chip cookie bread” recipe that looked tasty and I had to try it!
This cuddly cake is gluten-free, low in sugar and carbs 🙂
Recipe:
- 1 cup almond nut butter
- 5 eggs
- 2 tbsp honey (or other sweetener)
- ½ tsp baking powder
- ¼ cup coconut flour
- 1 tsp vanilla extract
- 2 tsp apple cider vinegar
- A handful of chocolate chips
Here is how the magic happens:
Place all of the ingredients except the chocolate chips into a blender/food processor.
Blend until smooth
Add the chocolate chips and stir by hand until combined…
Pour the batter into a well greased loaf pan..

Bake in a 170 degree oven for 25-30 minutes or until the cake is golden in colour….
Remove and place the cake onto a rack to cool off…
The outcome is a soft, moist cake, perfect for tea…
